While there is obviously no one size fits all dog, are there any breeds that are particularly difficult or unique that should not be as popular as they are now?

that is hard. Obviously the media. But due to popularity more dogs of that breed are produced and it hurts with temperment and health.
Breeds I hope never become too popular due to needs (too many already have)
I hope the Italian Greyhound never becomes too popular. I love the breed but they are not for everyone.
